Healthy Banana Pancakes!


Pancakes are my absolutely favourite breakfast food. Actually, who am I kidding? It's my favourite anytime food! But after reading the ingredients on the back of the box, I cringed. I always heard that banana pancakes were a thing, but I didn't know it was this easy!

INGREDIENTS:
2 eggs (with or without the yolk - I prefer without)
1 large ripe banana
Honey (in lieu of maple syrup)

OPTIONAL:
Pinch of baking powder 
Dash of cinnamon OR sugar
(I did not use the optional ingredients, but some enjoy extra flavour)

DIRECTIONS:
1. Peel the banana
2. Mash the banana in a bowl OR put it in a small blender
3. Add eggs and continue mixing 
4. Put pan on low-med heat and butter pan
5. Add spoonfuls of the mix to the pan and flip when ready

These pancakes do NOT taste like the boxed pancakes- but it is an acquired taste and scrumptious!
